Ingredients

  • 4 tablespoons butter
  • 3 cloves of chopped garlic
  • 1 large onion, chopped (preferably Vidalia sweet onion)
  • 1 can fire roasted tomatoes 
  • 4 cups chicken stock
  • 1.5 cups BBQ Sauce (I use Sweet Baby Rays)
  • 2 tablespoon Worcestershire sauce
  • 1 scant tablespoon brown sugar
  • 1/4 tsp cayenne pepper 
  • 2 pounds pulled pork (or chicken)
  • 8-ounce frozen corn
  • 8-ounce frozen Lima beans
  • Salt and pepper, to taste

Directions

  • Melt butter in a Dutch oven over medium high heat.
  • Add garlic and onion, and sauté for about five minutes until softened and fragrant.
  • Stir in remainder of ingredients, bringing to a boil, then reduce to a simmer and cook over medium low heat for one and a half hours, stirring occasionally.
  • Serve with cornbread or saltine crackers. 
  • This freezes well!

"Brunswick Stew is the quintessential dish from where my Buff grew up! We live in Coastal Georgia, in St. Simons Island, and Brunswick Stew was invented here in the 1860’s. Heartier than mom’s chicken soup, it cures everything from colds to loneliness.
