Ingredients

  • 1 pound lean ground turkey
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 large garlic cloves, minced
  • 1 teaspoon freshly grated ginger (or 1/2 teaspoon ginger powder)
  • 1 bell pepper, diced
  • 1 tablespoon soy or tamari sauce
  • 2 tablespoons Fish Sauce (Red Boat is our favorite)
  • 1 teaspoon sesame oil
  • 2 teaspoons rice vinegar or distilled white vinegar 
  • 1 pinch red pepper flakes, optional
  • 2 green onions, sliced thin
  • salt, to taste
  • ground black pepper, to taste
  • fresh lettuce leaves (romaine, iceberg or butter leaf)

Directions

  • Heat oil in large pan on medium high heat.
  • Add onion, garlic and ginger, and cook until translucent.
  • Add ground turkey and cook for about 3 minutes or until lightly browned.
  • Add soy sauce, fish sauce, sesame oil, rice vinegar, red pepper flakes and combine with turkey meat.
  • Add bell peppers and green onions and cook for about 5 minutes or until everything is combined well and turkey is cooked through.
  • Add additional salt and pepper to taste.
  • Serve the filling scooped into lettuce leaves.
